Sweet potatoes have been around since prehistoric times. Some scientists believe that dinosaurs might have eaten these delicious vegetables. They have been cultivated in the United States for centuries.
History tells us that the Native Americans were already growing them when Columbus arrived in 1492. The ship's log indicated that he took some sweet potatoes back to Europe with him.
Potatoes are tubers, which are underground stems. SweetPotatoes are actually roots.
The most common flesh color (or the insides) of a sweet potato is a vivid orange. These are sometimes called "yams." However, a yam, or can of yams you buy in the store, is actually a sweet potato.
