Chocolatey Pudding Surprise
- 1 cup cooked Sweet Potatoes
- 4 ounces reduced fat cream cheese (not nonfat)
- 1/2 cup lowfat vanilla yogurt
- 1/4 cup brown sugar
- 1/2 cup chocolate syrup
Combine all ingredients in blender or food processor. Blend until very smooth and creamy. Makes 4 servings. Health food that doesn't taste like it!

Super Sweet Potato Pie
- 1 1/4 cups cooked mashed Sweet Potatoes
- 3/4 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 pkg french vanilla instant pudding
- 3/4 cup evaporated milk
- 2 large eggs, room temperature
- 6 T butter or margarine
- 1 1/2 tsp. vanilla
- 9 inch unbaked pie shell
In large bowl combine all ingredients and beat at medium speed until well blended. Spread evenly into unbaked pie shell.
Bake at 450 degrees for 10 minutes. Reduce temperature to 350 degrees and bake for 40 minutes longer or until set. Cool on wire rack. Makes 8 servings

Smashing Orange Smoothie
- 1 cup cooked Sweet Potatoes (8 oz.)
- 3 cups orange juice
- 1/2 cup lowfat vanilla yogurt
- 1 envelope whipped topping mix (like Dream Whip)
- 2 tsp vanilla extract
- 3 packets low-calorie sugar substitute
Pour 2 cups of orange juice into blender; reserve the other cup of orange juice. Add remaining ingredients to blender and whip until smooth and frothy. Pour into pitcher; add the reserve juice and stir. Serve immediately. Makes 6 servings. Super!

Mouth Watering Muffins
- 1 cup cooked mashed Sweet Potatoes
- 1 1/2 cup flour
- 2 1/4 tsp baking powder
- 3/4 tsp salt
- 1 cup sugar
- 2/3 tsp cinnamon
- 2 large eggs
- 3/4 cup vegetable oil
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins
Preheat oven to 350 degrees. In large bowl, combine Sweet Potatoes, flour, sugar, cinnamon and salt. Add eggs and oil. Blend well. Stir in nuts and raisins.
Pour batter into greased muffin cups until 3/4 full. Bake for 15 minutes or until tops are springy.
Remove from pan and serve warm. Makes about 1 1/2 dozen muffins. Yum!
