O Magazine Features Sweet Potato Quinoa Patties

This past February, O Magazine‘s food editor, Kate Rockwood, judged our No More ‘Mallows Blogger Recipe Contest and she was quite taken with the winning Maple Sweet Potato Pecan Burgers, so taken in fact that she adapted the recipe and included it in the October issue of the magazine as a solution to one of five featured cooking questions! Kate said back in February, “This rocked because it had a nice crust and firm texture. The sweet potato and kale layered sweet and bitter beautifully, and the onion topping was spot-on. This will be my go-to burger for spring.”

Q: What’s the best way to get more superfoods into my diet?

A: …try incorporating superfoods into the entree in the middle of the plate…[mix] antioxidant-rich sweet potatoes and vitamin-packed kale with quinoa (a powerhouse grain) to form satisfying crispy patties.

    • That’s great! I love them too. Before I form the patties, I eat a great deal of the mix straight out of the pot. It’s the same feeling you get when you eat cookie dough before forming cookies, except this is actually healthy. What a bonus!
