Sweet Potato Turkey Burgers

Ingredients
- 2 cups mashed sweet potato (about 1 pound)
- 1 package ground white turkey meat (about 1-¼ pound)
- ½ cup finely diced red onion
- 1 teaspoon salt
- ¾ teaspoon ground cumin
- Oil for sautéing
Instructions
- In small pan over medium heat, heat 1 teaspoon oil. Add onions; cook and stir until slightly soft, about 1 minute; Set aside.
- In large bowl, combine sweet potatoes, turkey, salt, cumin and cooked onion; mix well.
- Form eight 4- to 5-ounce patties. In large pan over medium heat, heat oil. Cook patties until browned and cooked through, about 5 minutes per side.
- Assemble burgers with your choice of toppings.
