Sweetpotato Waldorf Salad
Recipe
Ingredients
- 3 Cups grated sweetpotatoes
- 1/2 Cup raisins
- 1 Cup chopped celery
- 1/4 Cup chopped green onion
- 5 oz. chopped baked ham
- 1/2 Cup sour cream
- 2 Tablespoons orange juice
- Lettuce for garnish
Instructions
- Bring grated sweetpotatoes to a boil in water
- Cover and boil 1 minute only
- Drain immediately
- Place sweetpotatoes in ice water
- Let stand for five minutes
- Drain well and pat dry with paper towels
- Combine sweetpotatoes, raisins, celery, and onion. Stir in ham
- In a separate bowl, mix in sour cream and orange juice
- Toss with sweetpotato mixture
- Chill overnight & serve
