How to Choose and Handle SweetPotatoes

- North Carolina SweetPotatoes are available every month of the year.
Select firm, fairly evenly-shaped sweetptatoes with even skin coloration.
For the most nutrition value, always select SweetPotatoes with a deep orange color.
Avoid SweetPotatoes with any signs of decay.
- DO NOT STORE SWEETPOTATOES IN THE REFRIGERATOR. Storing in the fridge will produce a hard core in the center.
Instead… Store SweetPotatoes in a cool, dry, well ventilated container at approximately 55 degress F (Your basement in the summer or your garage in the winter is best!).
- For the best flavor and freshness, use your SweetPotatoes within a week or two after purchase.
- Handle SweetPotatoes carefully to prevent bruising.
- When cutting SweetPotatoes, always use a stainless steel knife.
- SweetPotatoes are more nutritious if cooked in their jackets. Wash and dry thoroughly before cooking.
- Cooked SweetPotatoes freeze well. Wrap unpeeled cooked SweetPotatoes individually in aluminum foil or freezer wrap. Place in plastic freezer bags, label, date, and freeze!
