Sweet Potato Wedges with Fresh Cherry Salsa

Cherries are flooding the markets right now and you should take advantage! I love this gorgeous recipe from The First Mess because you get to use cherries fresh and in their most natural state instead of cooking them down to a sweet goo. The best part is, this sweet salsa is paired with grilled sweet potato wedges, a fun bbq snack. For a little flavor boost, sprinkle a few crumbles of salty feta or creamy goat cheese over the top if you so desire!

serves: 4
notes: You kind of have to par-boil or par-steam the sweet potatoes before grilling. .

for the sweet potatoes:
3 medium sweet potatoes, scrubbed and cut into wedges or rounds
1.5 tbsp grapeseed or olive oil
zest and juice of 1 lime
1/2 tsp ground cumin
1/2 tsp ground chipotle powder
pinch of chili flakes
salt and pepper

for the cherry salsa:
heaped cup of de-stemmed sweet, black cherries, pitted
2 green onions, thinly sliced
1 inch of ginger, peeled and grated on a rasp zester
zest and juice of 1 lime
black pepper
