Go Further with Food this March with Sweet Potatoes!
March is National Nutrition Month® and this year’s theme, Go Further with Food, encourages us to achieve the numerous benefits healthy eating habits offer. It also urges us to find ways to manage food resources and cut back on waste, which helps you focus on getting the nutrients you need and saving money and the planet. Become a Meal Prep Star
One way to help save you time, money, and help prevent food waste is prepping your meals for the week. Try cooking sweet potatoes ahead of time and stuffing them six different ways throughout the week to ensure you’ll use up all of your ingredients you have on hand, which helps prevent food waste. It also gives you the variety you need to enjoy the food you eat while getting the nutrients you need.

Liven Up Leftovers
Another great way to help prevent food waste is to consider the foods you have on hand, whether yet to be used or leftovers, before running to the grocery store. Also, reorganize your refrigerator by putting foods that need to be used up first in the front and moving pantry items around by sell by dates.
One way to use up leftovers is spread sweet potato puree on toasted bread; top with leftover shredded chicken or turkey from your previous night’s dinner, your favorite cheese (maybe feta?), avocado slices and your favorite hot sauce for a leftover open-faced sandwich.
Plan to Eat More Meals Together
The most important part of eating is enjoying a healthy and tasty meal with those you love. Find ways during National Nutrition Month®, and all year long, to take time to share a meal without the distractions of electronics and busy schedules.
