Sweet Potato Chicken Pastry

Sweet Potato Chicken Pastry

  • 3 boneless skinless chicken breasts
  • 1 can chicken broth
  • 3 cups NC sweet potatoes, diced
  • 1 package Anne’s Frozen pastry
Directions
  1. In large pot cover chicken with water and boil until tender (approximately 45 minutes.)
  2. Peel and cube sweet potatoes into 2 inch cubes
  3. Remove chicken from broth and set aside.
  4. Add 1 can of chicken broth and sweet potatoes to pot.
  5. Cook until sweet potatoes are fork tender (approximately 20 minutes)
  6. Cut chicken into strips and add back to pot.
  7. Bring to boil and add pastry according to package instructions.

Serves 8-10
